Looking to buy a sleeper for £5k and convert it to LPG. I used to have a LPG V50 T5 and it was amazing, so I'm hankering for that again. The T5 engine goes well with LPG and is very reliable.

Any other cars should I consider, as well, please?

Volvo, Mercedes, BMW, Saab (but a proper one not a rebadged Vauxhall/Opel), all take to LPG well.
