All of the motorway services, with the exception of the Carrefour station on the A1 just North of Paris, are open and manned 24/7. I always travel at the same sort of time, ferry in the early evening so with losing the hour and travelling time, I'm hitting the Paris Periphique at something like midnight/1pm so the traffic is clear.
Out of season a few of them do close at night and are card payment at the pumps so no GPL (as the station isn't manned) but not at this time of year. A couple of the BP owned services further south of where you are going, have recently been refurbished and GPL removed but it is still available at all the others. There are signs giving prices for the next and subsequent stations as you approach one so you can check that the one you intend stopping at has GPL. Hardest part is that a lot of the others have moved GPL to the edge of the forecourt so you drive in, in pitch darkness in the middle of the night, trying to see where they pump has been hidden!
